Smoked Salmon Pasta

Ingredients

  • 200g Prime Smoke Salmon slices cut into strips

  • Fresh pasta

  • 1 small garlic clove, thinly sliced

  • Halved cherry tomatoes

  • Cooked and peeled broad beans

  • Basil pesto with pine nuts

  • Parmesan cheese

  • Rocket oil

  • Micro herbs

Method

Bring a large pot of generously salted water to a boil over high heat.

Heat the oil in a large frying pan over medium heat. Add the garlic, halved cherry tomatoes, broad beans and black pepper and cook, stirring often about 1 minute. Add basil and pesto and stir through. Remove from heat and set aside.

Drop the fresh pasta into boiling water and cook until al dente - about 2 minutes. Using the tongs, transfer the pasta directly into the frying pan. Add a little of the pasta water and toss over medium heat until the sauce thickens slightly and the pasta is coated, adding more pasta water by the tablespoon  to reach the desired sauce consistency.

Remove the pan from heat, add the Prime Smoke Salmon slices, and toss until he pasta is well coated. Taste and season with additional salt and black pepper as needed. Divide the pasta among 4 and 6 serving bowls garnish with micro herbs and thinly shave or micro plain parmesan cheese over he pasta. Serve immediately.
